Territorial over litterbox?

I think my rabbit Allie (~7-8 years old) is becoming more territorial over her litterbox, but her behavior is very confusing to me.
Over the last year or so, I’ve noticed sometimes when I go to refill her hay or tend to the litter, she will stop what she is doing and sprint to me and the litterbox. Every once and she will grunt or lunge, but I didn’t see any harm/think much of it.
Today, however, she bit me! I gave her more hay and she ran over like usual. I even leaned down and pet her for a few minutes and she seemed fine. But when I stood up and walked away, she bit me. Hard!
I can’t tell if it’s an escalation of being territorial over her box, or just a really weird way to request more pats. I am especially worried since my wonderful roommates will watch after her from time to time if I am away for a couple days, and I really don’t want this happening to them. Any insight is appreciated!

Have you been petting other rabbits? Do you smell different? My rabbits get like this after I come back from volunteering at the rabbit rescue. They will also act more territorial if I smell way different than normal (like coming home from the airport)
